Tradition & Heritage

Born in the green hills of Collio

Why is our wine special? Our grapes ripen on predominantly flysch soil known for its richness in minerals on the green hills of Goriška Brda which are squeezed between the Alps and the Adriatic Sea and offer a perfect backrop between the cool Alpine winds and the warm Mediterranean air.Our small private winery relies on methods and recipies that are steeped in tradition and history giving our wines their distinctive flavour. The grapes are harvested by hand and only the best are selected for wine production. We then cork and wax our bottles before submerging them into the clean, blue Adriatic Sea. A year later, the luxury sparkling wine Mare Santo® is born.

Small private winery

Hand picked & selected grapes

In our family, we don’t believe in mass production. We do our work with love and passion which can be recognized in the quality of our wines. Our vineyards are small and at 10-30 years of age in prime productivity period. We are proud to call ourselves boutique producers as our production does not exceed 60.000 bottles a year of each variety. Our firm belief is that people should respect nature and as a result nature pays us back with its best & finest.

Why the sea?

Constant low temperature

The temperature at this depth of the sea is constant which makes it perfect for ageing wine.

Rich marine life

Seashells attach to our bottles rendering each bottle into nature’s one-of-a-kind artwork.

Low light

At a depth of 20 metres below the Sea there is a very minimal level of light. This is essential for aging wine, because the sun's UV rays can damage the molecules in the wine causing it to

Saltwater minerals

Minerals from the seawater seep through the cork and allow a small exchange with our wines which gives Mare Santo a higher mineral content compared to other sparkling wines.

Ceaseless movement of currents

The strong currents continuously move the bottles and keep the wine alive in the process. This in turn gives the liveliness of Mare Santo bubbles its refreshing taste and the higher content of bubbles leave a richer sparkle in the mouth.
